WHAT PORCINI LOOKS LIKE The porcini (Boletus edulis) is one of the most prized mushrooms in gourmet cooking. It stands out for its fleshy cap and sturdy stem. Its cap can reach impressive sizes and ranges in color from light to dark brown, while the stem is typically short and stocky, white to beige. Porcini grow mainly in mixed forests dominated by beech trees, starting in early autumn. HOW TO COOK DRIED PORCINI Soak the mushrooms in hot water for 20 minutes before cooking. They work well in many recipes, including: Porcini sauce: sauté chopped shallots in butter, then add the porcini. Porcini risotto: add chopped porcini to your risotto for an earthy, rich flavor.
