Its gelatinous, translucent texture, in shades of brown or purple, gives it a striking and appealing look. This mushroom grows mainly on decaying wood and is prized for its crunchy bite and its ability to soak up the flavours of a dish. HOW TO COOK JUDAS'S EAR MUSHROOMS Before cooking, soak the dried mushrooms in hot water for about 10 to 15 minutes to rehydrate them. Once rehydrated, they work well in many recipes. Asian-style soup with Judas's ear mushrooms: add rehydrated mushrooms to a vegetable or meat broth with noodles, fresh vegetables and spices for a flavourful soup. Stir-fried vegetables with Judas's ear mushrooms: sauté the mushrooms with seasonal vegetables, garlic and a dash of soy sauce for an Asian touch.
