Chalet Project

Chalet Project is an artisanal workshop based in Villeneuve, in the canton of Vaud. We are Elsa and Tim, a Swiss-New Zealand couple, and we turned bone broth into our profession from the family chalet that gave our company its name. From our professional kitchen on the shores of Lake Geneva, we produce 100% Swiss organic bone broth and beef tallow. That's why we use organic beef and chicken produced right here in Switzerland, raised in ideal conditions. We take fresh, meaty beef and chicken bones, add organic vegetables and a touch of seasoning — that's it! There are no additives. The whole thing simmers for 24 hours to extract all the nutrients and flavour. The result is a smooth and flavourful broth with just the right amount of salt. For our beef broth, we first roast the bones to enhance the flavour. In addition to simply heating and enjoying it, we recommend using it in your cooking to enhance the flavour, texture and, of course, the nutritional value. At home, we love using it in risotto, Bolognese sauce, barley soup and mushroom sauce, but the possibilities are endless: use it however you like! Our 100% natural beef tallow, extracted directly from organic beef fat, is a perfect substitute for vegetable oils. An incomparable flavour that coats food beautifully, ideal for roasting or frying.
