    Black garlic is "matured" garlic: The raw garlic is cooked at a low temperature (between 50 and 70 degrees Celsius) for two full weeks in a drying chamber (with very high humidity). It is then dried for several weeks, depending on the size of the garlic heads, to achieve the desired level of ripeness. Black garlic can be stored for several months without drying out at room temperature (refrigeration is not necessary) provided it is kept in an airtight glass container.
