L’ail noir est un ail « maturé »: L’Ail cru va cuire à basse température (entre 50 et 70 degrés) pendant 2 semaines complètes dans une étuve (avec un taux d’humidité très élevé), il est ensuite séché pendant plusieurs semaines selon la taille des têtes d’ail afin d’obtenir l’affinage désiré

L’Ail Noir se garde plusieurs mois sans sécher à température ambiante (le frigo n’est pas nécessaire) à condition d’être placé dans un contenant en verre hermétique
