La Gentiane est une plante dont la racine est récoltée dans les pâturages du Jura neuchâtelois et vaudois en Suisse, entre la mi-septembre à la mi-novembre. 

La racine qui se trouve à une profondeur d'environ 20 à 30 cm est arrachée à l'aide d'un instrument appelé "le piochard" il s'agit d'un pic légèrement arrondi qui se loge au bout d'un manche en bois d'environ 150 cm. 

L'arrachage à la main en lieu et place d'un arrachage mécanisé permet de ne pas mutiler la racine, ce qui pourrait engendrer une perte en eau et en sucre naturel contenu dans la racine. Un bon arracheur de gentiane peut extraire environ 100 Kg de racines par jour.

Les racines sont soigneusement brossées de la terre qui les enveloppes, elles sont lavées, ensuite coupées à l'aide d'un "coupe betteraves" et misent en tonneaux.  

Du fait de leurs faibles teneurs en sucres, la fermentation alcoolique des racines ne peut démarrer ne manière autonome, il est nécessaire d’y adjoindre une levure naturelle afin d’activer le démarrage de la fermentation.

Après la fermentation alcoolique, nous procédons à une première distillation pour extraire l'eau-de-vie,  la technique utilisée n’est pas la même que pour les eaux-de-vie de fruits, dans ce cas,  nous opérons une seconde distillation afin de concentrer  la teneur alcoolique et  les arômes. 

La réduction à la teneur alcoolique désirée s'opère à froid par adjonction d'eau obtenue par osmose inverse

Les rendements sont très faibles pour ce produit, ils sont de l'ordre de 4 à 5% soit 100 Kg de racines pour 4 à 5 litres d'eau-de-vie à 46% vol.
